Oof she’s sitting a little low in the soil. Can you repot (again, I know) and put the crown (the part where the leaves start growing from) just level with the surface of the soil. This will mean the part of the crown where the new leaves grow from will be above the soil and will be way less likely to rot.
At the same time I think you need to mix more perlite in with the soil, it’s important to have an extremely light airy mix for AVs.

I find African violets to be rather resilient little plants. Light, the right water, and a whole lot of time.
