I’ve got about 500 gallons in 10×12 and I don’t think is does anything.

There’s very little heat transfer happening there to the point where those barrels have negligible benefit. The plastic the water is contained within is a thermal insulator: it’s the material you’d choose if you wanted the least amount of heat transfer. You want large surface area + high heat transfer rate to heat your interior space. The barrels are low surface area and low heat transfer rate.
A simple solution would be to circulate the water in the barrels through a radiator. This will expose the liquid as much as possible to the air inside the greenhouse. Absorbing heat in the daytime and emitting it at night.
