There was a time that all I wanted in the world was a little farm where I could raise my family and grow our food. Now, that is exactly what exists outside my door. In watching it unfold, a new dream was formed in my heart – to share this beautiful life with others and teach them the lessons we’ve learned along the way. Welcome to our journey, friend.   1. Well lemon grass is not my cuppa. Some reason the taste not pleasant for me BUT eggplant give me tons. I remember back in Hungary when I was growing up we were looking forward the summer so we can get it than my Mum processed it and put it into jars for winter. Ohhh how much we loved bring it out the middle of winter and have it on hot toast. Lovely memories. Here in Oz we have it all year around so I can just buy 2 and make the dip and have it in the fridge.

  2. For the lemongrass I do a bangin soup that’s sort of like a corn chowder but the broth is made with a ton of lemon grass ginger coconut milk and the cobs of the corn that you use the kernels from.

  3. Jess, Lemongrass leaves can be braided and dried, then later you can steep it to make a wonderful tea. So don't throw those lovely greens away.
    Also you can use it for salves <3

  4. After you said you were beginning to itch from cutting the lemon grass, I kept saying , “ Please stop harvesting and go scrub your arms!” I’ve been there and the rash isn’t fun. So glad you are better the day after!

  5. WOW – that is amazing mushroom haul. Love that lemongrass plant. I have to replant one every year. I started to plant them to help keep mosquitoes away. That radh looked painful.

  6. Getting excited to be in the garden and forgetting to protect ourselves or bring proper tools is a gardeners favorite pasttime, haha. I am also guilty 😅😂

  7. So they had a soup potluck yesterday at my church and an Asian couple brought a chicken soup with Thai Basil and Lemongrass in it.

  8. Omg I freaking LOVE lemongrass tofu. I’m sure it’s good on chicken too if you don’t like tofu. I don’t follow a recipe, just kind of combine sugar, soy sauce, garlic and red chili flakes with stock until it tastes good but there are a ton online. There’s a Vietnamese restaurant near me that put me onto it. Try it!!

  9. If you dry mushrooms gill side up in the sun they can produce enough vitamin D to be a really good dietary source in the winter time. Great boost to protect against winter colds

  11. You HAVE TO TO A THAI SOUP WITH LEMON GRASS BOILED IN WITH THE SOUP OF COCONUT BROTH BASE CHICKEN OR SHRIMP SOOO WONDERFUL!!

  12. I don't cut off the bottom thick part of the lemongrass, only the roots. I break of a stem of the main plant to use. Crush the stem before using it in a recipe.
