We are Dan & Laurie and our land is called Freedom Forest – Its 3 acres in the South of England where we are creating an edible oasis and trying to provide as much for ourselves, from our land as possible and we are completely off grid.
Our food growing journey began together in 2017 when we created our first No dig lasagne bed. Every year we grow more and more and now we are currently around 60-70% self sufficient in our food needs.
Our style and methods are inspired by permaculture and we try to be thoughtful about how and what we do, to be as gentle on the planet as possible.

Weโve been gathering Dandelions from our Food Forest this week and enjoying glistening, fragrant Dandelion Honey – Its super easy to make, so we made an extra video this week, as we wanted to share this simple recipe whilst the Dandelions are pumping. We’re loving foraging and using the wild edibles that grow naturally on our land, they are great for extra nutrition and goodness.

Amazing how the greenish pulp in the saucepan turned into the golden deliciousness at the end. I love dandelion in salad but had less success with dandelion wine – it was like drinking rocket fuel! A couple of years after I poured it down the sink, I was at a posh dinner where the wine tasted exactly the same as my rejected dandelion vintage ๐คฃ๐คฃ๐คฃ

Why do vegans eat so much fake food. Real honey is highly nutrient special. Sugar is not. Fake chicken, butter, meat, eggs, etc are a poor replacement for the real thing.
I love all these great recipes you show us and can't wait to try this one.

Hi hello lovely lady , when it's come to dandelion, every part of the plants are edible (flowers,leaves, roots) the roots are grilled and used like coffee and of course the leaves are used as salad or it can be cooked like spinach! I learned of the nutritional value of this plant 3 years ago, sometimes I will simply pluck a flower, blow the wee beasties out and eat it, tried making the coffee but wasn't impressed – I'm going to try your recipe, thank you for the video

Why the huge amount of sugar though? The insulin spike must be horrendous after a teaspoon of that honey.
