  4. Kaye: Due to the price of whole chickens now, I instead get two 3 lb each rotessierre chickens on a regular basis at Sams Club. I strip the chicken meat off the bones. It is super easy to pressure can with no cutting required. The skin, juices, jelly stuff and bones go directly in to the Instapot with 2 T apple cider vinegar and filtered water for 3 1/2 hours. I then pressure can the bone broth the next day after straining and removing the fat that has separated. I pressure can the white meat separate from the dark meat and use filtered water to fill each jar. For 2 each $4.99 (total $10.70 with tax) and total 6 lbs. rotisserie chickens from Sam's Club, I get 4 pint jars of white meat, 3 pint jars of dark chicken and 7 pints of dark tasty bone broth. The bone broth also makes great chicken gravy when adding a thickener.
