My favorite ‘recipe’ for wassail is apple cider, cranberry juice, white grape juice, cinnamon sticks, whole cloves and whole allspice. Our family’s absolute favorite!
I am always surprised when people actually know about wassail. It has been a tradition in my family all of my 55 years. My mom made it, my kids make it for their families and now everyone will be making it. We never added OJ or sliced the oranges. Instead we decorated them with clove designs.
Starbucks does indeed still serve the apple caramel and spice and it screams fall! I love having one this time of year! Reminds me of spending time with my sister!

I started making this punch several years ago to take to our women's club Christmas party. It was always a big hit.

If you simmer this down to a syrup and store in the fridge (can mine in pints) you can add to hot tea when cold and cold tea when hot. Up here in the maritime Pac NW this time of year is unfiltered apple juice season (which we get by the case). Once the warehouse is out (the apples have just finished harvesting), it's gone.
I simmer with oranges, lemons, and pears.
Picturing this simmering a cast iron pot on top of a wood stove and the heavenly smell it would make in the house. Going to have to give it a go.

Is this a difference between the US and the UK? If I understood correctly, Jess, you were suggesting that you could make your punch alcoholic by adding something. In the UK, or certainly in England, where I am, cider is alcoholic. Without the alcohol, it's just apple juice. You seem to be making a distinction between apple juice and cider, though, so what is the difference between the two in the US? I'm curious!
It made me think of the wassailing song. 😂 Which does me good health and I think it's neat how it transferred over to a door to door thing. Yup a great tradition

My grandmother used to make wassail with her own homemade apple cider that she canned. As soon as you walked into her house after apple harvesting you knew what she was doing. Her closets were against the outside walls of her home so she used those as her "canning" cellars. Her house was always so full of the seasonal smells every time you walked in. I loved to spend the night at her house. I used to ride my bike to her house and visit till it was nearly dark. I would call my mother and ask to spend the night. Her applesauce on top of her pancakes was the best breakfast.
This is the second time in my life celebrating the winter holidays. Still figuring out how to do all the festive things. I'll add wassail this year. I hope the smell is as magical as it sounds!

You cook as my mum does, a bit of this, a pinch of that, and I think this will taste good lets add it and see what happens. I find this to be a really accesable way into cooking, with the freedom to experiment.

No born again believer should take part in this pagan tradition. Wassailing is a Twelfth Night tradition that has been practised in Britain for centuries. It has its roots in a pagan custom of visiting orchards to sing to the trees and spirits in the hope of ensuring a good harvest the following season.
Please be discerning about what you practice!
Wassailing still happens in GB. Herefordshire has lots of cider apple trees. (cider as in the one with alcohol) And wassailing is still a thing.

I remember that from church when I was young. I’m 69 today!! So ya, that church was an old Episcopal church and was very much old English traditions… I’m sure there was wine or brandy in it because it burned the ears like liquor will still do. But the smell is amazing and great too if you have a cold.
if you do a long simmer with citrus, remove the peels or pull them out after only a few hours. otherwise, the peels can make it extremely bitter. i also like to add cranberries to mine because they are pretty.

I loved learning the history of wassail. We make spiced cider in the crockpot every fall. Love it!!!
