I’m not an expert on peppers, but they always taste sweeter the longer I leave them and the more water i give them before picking. Someone here hopefully has better advice.
Btw, What brand is your patio cover? Upper management says she wants me to build her one but I’d rather do a kit.

I’m having the same issue and no believe it’s not enough deep watering and lack of nutrients. They started to improve when I addressed these issues, but not quiet there yet.
