After a bout of rootrot, this little guy had no roots. So I let him grow in water, root growth stimulator and a little fertalizer. There is even some new leaves coming in.
Roots now have roots, but for making the jump from water to clay balls+soil,
So I let the plant dry for a little, and plant while keeping the soil moist?
Or should I wait for more root growth?

No, you can plant now. It’ll just be a bit top heavy. Use a bamboo skewer for support if needed (watch your roots). You’ll want very well draining soil. One of my faves for my snake plants (for most of my cacti & similar plants) is Spike & Bloom Desert Blend (or even succulent blend- there isn’t a ton of difference).
I propagate tons of snake plants. I’m currently being overrun with them. I clip a leaf & put it in water & when I have very established roots, I plant. You have plenty of roots now. As far as drying out before planting, I dont do that & have yet to have root rot. HOWEVER, Im careful not to overwater AND my house is very, very dry. Rhe rule of thumb is that you should. So, it probably wouldn’t hurt to let it dry 2-3 days & then pot.
Best of luck!
