
I harvested on Friday morning, and everything was fine. I went out of town for the weekend, and I came back to this sad, anemic, and dying thing (with one ginormous zucchini waiting for me. I did not see any little holes on stalks, and the two adjacent plants seem fine. (Houston, Tx)

Likely powdery mildew!
I would look for signs of squash vine borer- frass and split open stems
I know you said you checked for holes, but that sounds like textbook vine borer beetle to me. I’d keep looking since sometimes you can cut them out and keep the plant alive a little longer. Check really closely at the base of the plant for any mushy spots.
I would trim every leaf that looks sketchy, plus any leaf stems that are touching. Trim the most weathered looking of the two. Also as mentioned, you may have a powdery mildew problem. Squash and cukes are very susceptible to that.
I can’t plant any cucurbits aside from cucumbers because the borers decimate them in a few weeks.
