Is it white on the outside like a purple sweet potato?
Edit: There are several sweet potatoes that are white on the outside and purple on the inside. I was thinking like the Australian sweet potato or the Okinawa purple sweet potato. Where did you get it?

Looks like the kind we used to grow in the community garden when I was doing my bachelor’s down in SoCal. They are kind of whitish on the outsides and reddish purple on the inside. They are great if you cut them up and do some grilled chicken or ground beef sautee with taco seasoning, then serve with shredded cheese and greek yogurt. Super sweet/tangy combo with some heat. We must have eaten our weight in that over the years.
