I have some Correa Alba that was doing great, then one started drying out/dying. I went to give it some garden love today and noticed the others seem to be starting to show similar signs. I don't think it would be lack of water. Any thoughts on what might be going on.

Dig in a spades length next to the roots and check the soil profile, this will most likely tell you what is going on. It could be overly dry underneath (even though it looks moist on top),
Sudden die off like this is unlikely to be related to insufficient water. They are really hardy- mine didn’t even flinch after 1 week of 40+ degree days and no water.
Have you sprayed or fertilised recently?
I lost 3 Correas this year, all happily thriving one minute and dead the next. My mum has a lot of experience with native plants (myself not so much) and she said sudden deaths are not unusual. My Nan also had several randomly die over the last few years.
I’ll be watching the comments here eagerly for more ideas because I’m sick of replacing plants.
They’re quite vulnerable to root rot, have you looked at the roots?
