Hi, last summer (July/August???) I opened all my carrot seeds into the garden in a fit of chaos gardening. By October I had harvested a few 2 inch carrots that were pencil thin, so I stopped harvesting them and basically ignored them until now. I didn’t mulch or protect them in any way.
Tonight I was cleaning up the garden and harvested this bunch. Does anyone else over-winter carrots? I did not know this was a thing one could do and I am as surprised as anyone. I have no idea what kind of carrots they are, probably the whites from a rainbow mix packet. No orange or other colors.

They look like parsnips. Are they sweet, or do they taste bad raw?
