A month ago, I chopped the top off one side branch of this guy, under the impression that 1-3 new branches would start growing… this is the first time I’ve tried doing this and I don’t see any evidence of new branches started to grow. I am propagating the top part I cut and that has started growing roots roots. Am I being impatient or did I do something wrong?

Well, at least the part of it you propagated seems to be doing great!
The time period between seeing results seems to vary quite a bit for people, Usually it seems to be about 3 weeks at the early ones. So it may just not have been enough time. The new branches start out looking very small. You may have to check quite carefully to find them.
The new growth can be quite hard to spot when it first appears!! Usually it is close to a leaf node. Here an an example of new growth that is starting to emerge, in an area that is pretty typical where a leaf would be located on the plant.
