Basically the title! I think I planted a few blocks of ginger in these two containers after around Dec/Jan. I looked up on the internet and people are suggesting to wait until the plants die off and then harvest. Some are suggesting to wait until it flowers.

I live in Melbourne and it’s been quite warm this summer and uncharacteristically so for the May! I think it’s going to get pretty cold soon and I’m not sure if I should wait a bit more or pull these out.

You could harvest now for young, tender, mild flavoured ginger. It won’t store well, use it straight away or freeze it.
Or wait til it browns and dies off and you’ll get strong flavoured ginger that will store well.

When you harvest you should still intend to keep some plant so it can continue for next season.
Or do ppl kill the plant off to harvest?
