Left my agavoides and mystery Echeveria out for some sun and forgot to bring them in. Woke up to this. I am really upset. Do these guys have a chance? Also, is the flower stalk worth trying to pollinate or should I just get rid of it?

Make sure their wounds are dry before repotting them. It might be that some leaves will reabsorb or otherwise dry up.
I do not think there will be enough energy left in the stalk to produce seeds but you can try if something happens with it.
Squirrels? If so, after a similar disaster, I put out a tray of water for the tree-rats and they stopped messing with the plants.
