Toss up between potato and kumura (sweet potato). Actually potato does grow year round in my climate, but it’s definitely tougher to get a good harvest in summer heat/dry.

I can’t believe I’m saying this bc I low-key don’t like potatoes that much, but I think if I’m trying to go off of just purely how many ways there are to cook it and how many different styles of food you can make from it, potato is going to be the move.

Personally, this is why I studied foraging. Cattail rhizomes are extremely tasty and nutrient dense. I would spend my time on things that are more difficult to come by.
