Do I just chop one mid trunk & propagate the top? Never done this type of chop before…do I put the top portion to root in water? It’s so big that it feels like it will take months & months to get strong enough roots but I’m willing to. Any other tips or suggestions??

Any particular reason you want to chop it? It’d be totally fine to do, but it doesn’t really need it yet.
Personally, I’d go low and leave perhaps two leaves. Once it has branches, it’s much easier to grow it taller than it is to reduce it in size.
Also you should get rid of that bottle. Water it deeply and then do not water it again until the top layer of soil is nice and dry again.
More light would be helpful. Do you have a bright window you could put it in?
Edit: Oh, yea and yes it’s very easy to propagate the cuttings. Just cut them into sections, remove all but 2 or 3 leaves and stick them into water or soil.
