Easier to see in the third image, but my Fabiola is on a very long stem. It's not elotaited, but has just grown very huge ( I think x8 from the size I got it). It's now so tall that it can no longer support itself. Should I remove the dead leaves and bury it down?

yea that would keep it safe and healthy (: amending with 50% !grit next time you repot will also help. flowers are gorgeous.
a lot of succulents become decumbent (sprawled across the ground) or pendent (hanging downward) so if you like the height and dont want to chop, you might wanna consider a broad, shallow pot that will let her sprawl without risk of breaking or falling over, or a hanging pot with lots of support inside
