I love the natural deadwood accent and chose it to be the front of the tree. I now want to cut it down to about 10cm to introduce some taper and movement, but can’t decide on whether to go below the fork or to use one/two of them as a new leader/shari. What do you guys see?

My vote would be to cut it back to the big off shoot wnd let thst be your new leader
I agree with showing off the deadwood as the front (pic 3). I like the movement the left newest branch will bring to the tree. I would take off the middle and right branches, prune back the left branch. You can always cut lower if you’re not happy with the results.
With the size of your leaves and internodes for this species, I think you will have a hard time making this a smaller tree. My recommendation would be to grow this out for a few years to thicken the trunk further and make a larger bonsai.
