We had some very large rocks removed from our yard, and it looks like their equipment damaged some exposed roots of two trees. I’m a tree novice wondering if this is detrimental and what to do from here.

    Pull out all that grass all around the tree and those roots and then once your done, add a mulch ring.
    That will keep your landscaper from getting too close to it and hitting those roots with their mower

    One of my customers was mowing an exposed root for years before I suggested he stop to prevent damage to the tree. The tree is fine, some exposed root damage isn’t likely to cause any problems, but not damaging them is considered best practice.
