Growing your own vegetables is undeniably appealing, but it can often feel like a long game — with weeks or even months between sowing and harvesting. While patience is part of the process, not everyone wants to wait that long for results.

The good news is that some vegetables grow far more quickly than you might expect, with harvests ready in just a few short weeks. These fast-growing crops are ideal for beginners, small gardens, or anyone looking for a quick and satisfying win.

Jude Allen, head grower at Wild Restaurant in Hertfordshire, shares his top six speedy vegetables to try now, along with expert tips to help you get the fastest results possible.

Quick results start with the basics. As Jude puts it: ‘Think of yourself as growing healthy, life-filled soil, not just plants. Healthy soil full of microbial and fungal life equals healthy, pest-resistant plants, and more nutrient-dense food.’

Boosting soil health will speed up growth so Jude recommends creating polyculture beds, where different crops grow together. ‘Different plants take and give back different nutrients,’ he explains, ‘and some protect each other, herbs like mint, lavender and rosemary, or alliums like chives, can mask scents and help deter pests such as carrot fly.’

Flowers are just as important as vegetables: ‘Plant as many flowers as you do veg to attract pollinators and predatory insects. Nasturtiums are great, they’re edible, bring in pollinators and act as a decoy crop, drawing aphids away from your vegetables.’

‘Plant Dix Huit Jour (clue’s in the name!) for an 18-day quick turnaround, or French breakfast or Bacchus in late autumn. Hakurei Turnips are a super sweet, radish-like alternative and look stunning on a plate and usually ready to harvest in around 40 days.’

‘Micro herbs are mostly easy and can be grown inside. Avoid Amaranth, which is more difficult, but many vegetables have micro green alternatives and offer up to 40 per cent more nutrients than their fully grown counterparts. Most have a more intense flavour than the full grown version so you don’t need much and they can be ready in 1-3 weeks. We love micro dill, sweet basil, cinnamon basil, wild rocket and red-veined sorrel for their intense flavours.’

‘Lettuce can be grown year round and gives a reliable crop. Dutch seed company, Rijk Zwaan, produces a range of Salanova lettuce in all different varieties with smaller amounts available from Just Seed. These are a great option for shady areas and easy to grow –Salanovas can be cut at the base and they will regrow three times. The seed is more expensive but the germination and growth is super reliable. Just give them a seaweed feed later in the season for a boost.’

‘Esmee is a great variety year round. Very quick and easy to grow and the more you pick the more you get. It will try and bolt in the heat so sow successions if you have the space and keep out of full sun.’ After 15 to 25 days you’ll be able to pick baby leaves.

‘Soft herbs like coriander, basil and parsley are all easy to grow indoors on a windowsill and grow well from seed. Plant several seeds together in one pot and resow another pot every couple of weeks for continual harvest.’

Basil is one of the quickest and can be ready to harvest in around a month, while coriander usually takes a little longer (around 4–6 weeks). Parsley is slower to establish but worth the wait.
