I had five scotch bonnet seeds sprout about five days ago, but they’re all still bent over in the soil. One did pop up, but its leaves look dead. I have a bunch of other different peppers that have sprouted and are doing good

It looks like damping off, the soil has likely been too moist. The others are likely able to handle it but the bonnets might be a bit more sensitive to it
Unstick them easily
Your medium looks pretty coarse
