The cling wrap like other plastics & aluminum foil, will leach into what your using for growing food😮
Next to dehydrating bananas in the sun (minus the plastic wrap) would be to put them in a dehydrator where you can set the temperature to below 119 degrees so the life force will be retained. Raw vegans do this often. Also, I dehydrate other plant food wastes for fertilizer/compost for the garden as well but just as people have experienced with leaving grains at room temperature for an extended period of time, moths find their way in, and lay eggs. To kill them and/ or prevent this from happening altogether, I store the dehydrated banana and other dehydrated plant granules, in the freezer.

I found an old blender at at a yard sale and use it for bananas skins and breaking egg shells to powder..best5 bucks spent!
Why not add them as-is to the garden?
Will freezing the banana peels until I have a bunch to dry them make it lose some of its nutritional value?
For people who are concerned about growing clean I would recommend doing research on fertilizers like Bone Meal, Feather Meal, Poultry Litter, ex. They source these from slaughter houses and can contain harmful toxins, any farm waste can be labeled as Organic, that organic label doesnt mean its clean, there are many much cleaner options out there.

If you happen to have an older cook stove with the pilot lights, the oven can be used as a dehydrator without turning on the main burner. To speed it up I can adjust the oven control to change the pilot light from 1/4 inch to 1 inch without activating the main burner, this does require getting down on my hands and knees so I can look into the broiler at the pilot light as I reach up and tweek the oven control.

I use a piece of window fly screen to place over the peaks to dry
