I started off these lettuce sprouts almost a full month ago. They took beautifully and grew well but now they've seemed to just stop. It's been cooler weather here, though inconsistent. Some nights have been in the 20s and others, like today 60 degrees (F) they're all green but very soft and flimsy. I know lettuce don't like too many temp changes, is that my culprit?

The cold soil temperature may have slowed the root development down somewhat. Lettuce is cold tolerant. Once the weather starts to warm up again you should see improvement. You can check your current soil temps here. (Night time temps of 20 degrees doesn’t mean the soil got that cold).
