In a 2.5 inch deep chicken feed trough, the roots just go sideways lol Plant then deeper though, they should be nearly flush to the soil/substrate

Lithops can thrive in both shallow and deep pots, it just may change the way you care for them, and it will also affect their size.
If you pot in shallow, their roots will be more shallow. You can water them less, and also fertilize them less so that they remain smaller. Their colours should be more intense as well. I liken it to bonsai. Many lithops are found in tight crevices and such in habitat.
You can also pot them much deeper. This will enable them to grow really big, they’ll multiply more, and they’ll grow faster in general. Especially if you are watering and fertilizing more, this means more flowers and bigger fruits and more seeds. Good for producing seeds or offsets, or breeding for specific traits.
