I actually put seeds down for parsnips late summer and then covered them in the fall with a snow cloth. Pulled one up the other day and they're still small but I'm hoping to get parsnips would be the first time. I'm not quite sure how long I can leave them, but since they're a root I just figured they would keep growing
I hope this goes for sunchokes in the ground too. I couldn't dig any this year before the ground froze, so no crop for the Winter season. Could have kicked myself. This gives me some hope for next Fall. Hope hope.

That will not work in Minnesota….we're two zones colder than where you are.
Parsnips get really sweet overwintered. Great suggestion.

My old neighbor said her grandmother dug a hole and stored root vegetable and sauerkraut there for the winter.
