So I just twisted off this pineapple head and after I peeled back some leaves I saw these roots. Now most tutorials say that I need to leave it out to dry before placing it in water. Now can I just skip this "drying" step since my pineapple already has roots? I'm afraid of drying them out too

    Yeah seems like the roots are starting to pop out keep it in water a little more and plant when the roots are about 1-1.5inches. Also, be ready to keep it in a pot for potentially 2-3 years.

    The drying step is to reduce the risk of rot. That chunk of fruit stuck to the bottom can be an issue. After a couple days you should be good to stick it directly in soil. I would water the soil lightly for the first couple weeks. That will make sure the plant doesn’t rot. After a couple weeks the roots should have grown a bit more and you can begin thoroughly watering. Use fast draining soil and let it dry out for at least a week before watering again. This is assuming you’re keeping the plant indoors and that you’re not already experienced with this. In case you’re not experienced, remember that pineapples are grown in Hawaii, so seek to emulate that environment if possible.

    Edit: as someone who has grown a pineapple in Michigan, there is no need to grow roots further in water. That just delays the plant growing in soil, where it wants to be. Once roots are growing, they will continue to grow, whether that be in water or soil.
