It looks like there's still some green on the stems. Should I leave then to dry out a bit longer or store away now? How to store over winter?

They look dry enough to me – I keep mine on kitchen roll under my bed since my room is fairly cold, but you just want anywhere cool and dry

Can store them anywhere, cool, dry, frost free and protected from mice. Can add some dry wood shavings to act as some insulation from the cold.
