My parents had a prolific tree. We would spend the morning and make tons of lemon juice. The trick is to bring it to a boil and it will last quite a long time in the deep freeze (not only was this pasteurization but it would stabilize the lemon juice and keep it from further ripening). I would typically reuse soda bottles and we would do dozens at a time.

The real answer (from a fellow lemon-tree owner) is figure out how to give some away. Maybe that’s a box on the sidewalk, a food bank, take a box to work, etc. It’s fun to make some stuff with lemons and preserve some, so definitely do that, but most people realistically just aren’t going to go through 100+ lemons before next years crop comes in. So do yourself a favor and take the pressure off – use what you want and give away the rest.

Candied oranges is nice, should work with lemons also?

I would just squeeze a bunch and freeze it. Like some mentioned you could make a very lemony tart or cake and freeze them for later. Candied peel could be good too though but that would just add to what you have to go through.
Lemoncello is perfect because you get 2 drinks from one! Soak the peels for a month in everclear then dilute it with sugar water and juice the peeled lemons and make lemonade!

I try to do marmalade with Meyer lemons every year. It’s good.
Beautiful crop! And I love preserved 🍋
Other things you can make:
– Lemon curd,
– dried lemon slices
– lemon pie
– gifts (perhaps jars of preserved lemon)
– polishing and cleaning
give some to neighbors and family. Also, lemon cake, preferably with raspberry

Limoncello
Preserved in salt,
[Lemon curd](https://www.chelsea.co.nz/recipes/browse-recipes/lemon-curd) was my first thought, and not just because you can fill donut bites with it. My other suggestion is [lemon slice](https://www.allrecipes.com/recipe/232799/chef-johns-lemon-bars/), but it doesn’t use enough lemons, even though it’s delicious.
