Definitely overwatered the first week I got it. I also had it in soil that did not drain well. Probably didn't get enough sun for the past month. The leaves have been going soft and falling off. I have not watered for the last month and switched the soil out for something more dry and well draining. Is it a chop and prop or is it gone for good? I feel so bad for killing it.

I don’t think it’s a goner. If you let the roots callus over (after cutting any possible remaining rot) and put it in soil, I bet you’ll be able to get roots.
I don’t think it’s done just yet and you can definitely chop and have success for a while longer but I have had several of these and I’ve come to the conclusion that the rainbow does not do so well indoors. It will at first (in the right conditions) but even then, it’ll eventually start dropping leaves or showing signs of some fungal issue. For any success you would need a stronger grow light, even t5 barrina lights would be better, giving at least 10+ hours of light a day. Put it in a very gritty well draining mix. Bottom soak is best for gritty mix. Bc they have thinner leaves they get thirsty faster but you don’t want to water too often bc they are prone to fungal issues. Even maybe add a mini fan for some airflow to help keep fungal issues away. Bottom line though, if this doesn’t make it, it’s not entirely your fault. Rainbows are not a very hardy echeveria.
My plants went 2 weeks no light and got weird but still survived and bounced back you’ll be fine just get it into good soil an it’ll bounce back
I’m reading all the comments because I just got a bare root rainbow a couple days ago and she’s callousing over right now. I’m kind of afraid now because everyone says they are temperamental and tricky to grow. I’m gonna try to enjoy the journey and see where it takes us. She looks pretty right now, so I’m going to enjoy it right now.

No, you can cute the roots up to the green part and wait for it to callous to replant
