When I received this plant, they were 3 sticks with 1 fried leaf, after a couple years theyve become this, but how can I encourage more growth and get it bushier?
I water once a week-ish (if the soil is still damp, I'll hold off until it's dry about an inch in). It gets light indirect sunlight in a NW-facing window.

There’s only a couple of variables to deal with here. The most obvious one would be to increase light. Have you not experimented with that?
The other one would be too decrease watering frequency, I don’t think that is the answer though.
Are you sure that pot isn’t too big for the size of the roots?
Mine are under 12 hours of gentle grow lights plus being in a window with indirect light and do great. They like more light than I realized
If you have a spot with morning sun, that would be perfect.
