They do this including producing roots at the nodes when they are stressed. It’s a form of emergency propagation. What substrate do you have going on currently? How much do you water?

Thats a Thanksgiving cactus and it seems like its super dry or has dry rot. If youre just top watering its not getting fully saturated. Soak in Water. if the soil is wet and doesnt dry its wet root rot.

she looks thirsty. These are cactuses but they actually grow in rainforests in nature. They don’t like to be completely dry. I water mine at least twice a week, but mine is quite big for its pot. If there is a lot of soil there to hang on to water, maybe a bit less. But no need to let it dry out. if the segments appear wrinkled, it’s just thirsty.

These don’t like to dry out all the way. They prefer to stay moist, not soggy. Water when top inch or so is dry. I wouldn’t worry about substrate changes until you get it a little healthier with the watering schedule. When it is time a cactus soil is okay for them. They can handle a lot of bright indirect light too.

It’s severely dehydrated, your soil has become hydrophobic. You need to bottom water it to saturate the soil make sure this plant stays damp

I know other commenters are saying it dried out too much but some of those pieces look mushy like it was overwatered. I use Olla terracotta watering spikes when I’m not sure exactly how much to water something. The plant will pull the moisture from it as it needs it. Less room for error.
