I had a hillside behind my house in the backyard area. It has some shrubs and small trees but a large area of dirt. There are also rocks that I know I need to remove. What is the best way to get grass in the dirt area?
Get rid of the rocks and shrubs. A little topsoil. Seed. Cover with a little more soil or pest moss.

With that slope, you are going to be battling it. Also, what is your use for grass there? Mowing is going to be rough. Unless you have a need for grass, it may be worth looking into mulching, planting natives suites for soil retention / sun exposure in that spot, and calling it a day.

I think the better question is, why do you want grass in that area? It looks like it will be hard to mow and is prone to erosion. I would do a mix of shrubs you actually like. They will have deeper roots than grass to prevent erosion and will be easier to maintain than grass once established. I don’t know what your region is but something like service berries (flowers then berries) or mock orange (flowers) would make me happier than mowing grass on a steep slope.
