We had a frost here in Iowa so I had to get them all off the plants. Is there any chance some of them ripen? None of them appear to be blushing at all – I don’t know what kind they are but some of them stayed small for months and others kept growing bigger.

Sad 🙁

    Yes. Just put them on the kitchen counter and give them at least a week or two and they’ll start showing color.

    Put a big ripe tomato at the bottom and stack the green ones ontop to help them ripen… you could also use them for salsa, or some green tomato recipes too

    You can put them in a paper bag with an apple and they will ripen that way as well. Roll the bag shut and check on them every couple days.

    We started canning our green tomatoes last year. I really enjoy the taste of them! Almost taste “pickled,” even though we only use a little salt and vinegar.

    We just ripened 30 pounds of green tomatoes, leave everything as is on the vine and put that in a couple of brown paper bags with a banana, then lightly close the top of the bag so light isn’t getting in but there’s plenty of air

    If they have a bit of yellow they can ripen off the vine. Put an apple in with them to hasten ripening with ethylene gas. Cover loosely with cardboard.

    Put them in a cardboard box with newspaper in between and on top. They will turn red. I did it last year with my green tomatoes and will be doing it again soon

    We put ours in a box in a warm spot and for the first time I covered them with a towel, they are ripening better and no mold. 
    The ones that are green with no chance of ripening get made into salsa verde
     Just used up last seasons jar for breakfast

    Get rid of the vines, and set them in a single layer, stem side down.

    You can also save these for secret winter tomatoes that your friends and family will be envious of. Wrap a few bunches in newspaper and keep them in a cool dark place (think root cellar) and when you’re craving a freshy, unwrap, place in sunny window on their shoulders and they’ll be amazing.

    Next year, cut the vines at the base and hang upside down in the garage or inside after the leaves die from frost. I’ve ripened several pounds of additional tomatoes this way and they ripen rather fast without getting mushy, a problem I’ve had when I simply pick them green previously. Learned this from a fellow farmer at the local market this summer! Hope it helps you in the future!!

    NYT has an amazing green tomato sauce for lamb or pork. I just made it with a ton of green cherry tomatoes. Few ingredients and takes 30 minutes to make.

    I made salsa verde when I had an abundance of green tomatoes

  21. You can make salsa verde using them and it tastes great even though they’re not tomatillos
