Apple Spice Cake
8” x 8” 350°, 35-65 minutes
• 2 ¼ cups flour
• 1 ½ teaspoon baking soda
• 1 teaspoon salt
• 1 teaspoon cinnamon
• ½ teaspoon ginger
• ½ teaspoon nutmeg
• ½ teaspoon allspice
• 1/8 teaspoon cloves
• 2/3 cup of vegetable oil
• 2 large eggs (room temperature)
• ¾ cup brown sugar (packed)
• ¾ cup sugar
• ½ cup sour cream (room temperature)
• 1 teaspoon vanilla extract
• 2-3 large Honeycrisp apples (skin on- grated) approximately 1 ½ cups
Brown Sugar Icing
• ¼ cup salted butter
• ½ cup dark brown sugar (packed)
• 2 tablespoons of heavy cream
• ½ teaspoon vanilla extract
• 1 cup powdered sugar
(Laura thinks the icing would be better if the brown sugar was dissolved)

My family lived next to a huge acreage orchard with so many types of apples. My mom made apple sauce and canned them Spies, were the best. The best pies were Macintosh.

Yes. The brown sugar icing that we make is in a pot heated.. then add icing sugar and beat when it cools down
There are a lot of silk lilac trees in my neighborhood. They are so beautiful when they bloom.
Why bother with bags or sprays? From my experience, the moths only penetrate the very top of the apple which can easily be cut off before eating.

I see that Captain Jack’s has a fruit tree spray. Any chance you could add it to your store so I can buy it from you to have ready in the spring? I bagged my apples too, which created a nice worm habitat on almost every apple. Kept the birds off, though (another lucky win for the worms! 😅)
It would of been easier to grate if you rested the grater on two sides of a bowl .

I think maybe you could melt the butter and the brown sugar first, let it cool then add the remaining ingredients. You might not need as much milk.

Love this! I think teaching your kids the basics of cooking early is a great thing. The first things I learned was Jello and baking cookies and cake. So fun!!
I loved the baking segment. You and the kids working and having fun together… It's just so pure and warm. Mine are in their 20s now and boy do I miss that time. I would do it the same way … I measure, they pour in and stir. When they got tall enough to reach the knives, then it was time to teach knife skills. Yesterday my daughter made me "Popeye Eggs". Your dad makes those with a different name, if I remember.

I love the way you measured your flour. That's how my high school home ec teacher said to do it a thousand years ago.
Here's my tip… On the grater, if you put the bottom inside a bowl, it won't slip around so much and it's a little easier on the cleanup.

HI LAura the cake looks fabulous! On the icing, you can melt the butter in saucepan, add brown sugar, until it incorporates and sugar granules melt, bring to a low boil for a min while stirring. Remove from heat, cool completely, Add confectioners' sugar, blend with mixer, frost and serve. ***Loving watching the kids learning, while doing, that is the best way, as you know for them to remember things. I learn better that way as well.
