To me those look like chives, it’s a tasty herb like spring onion but they have lovely round purple flowers like that.

I think it’s a wild chive/garlic. Cut a bit off the bottom of the stalk and rub some of the oil out. See what it smells like

Pretty sure its globe amaranth (Gomphrena globosa). Papery, clover-like globe flowers used in dried bouquets. Grows as an annual up your way; full sun, drains well. You can dry it and it keeps color.

Red clover
Gomphrena! You can dry it really well, or it will crumble into seeds to make more plants next year. Sow in late spring after last frost date.
