You can cut anywhere between the nodes, where the stem ends and there’s a lil lump. Eg where your index and ring finger are touching the plant but not where your middle finger is touching it

The nodes are the little bumps where the leaves grow. You can cut between any of those, but I recommend cutting it a couple of nodes above the soil so that when the new growth happens, you won’t see an ugly little stump where you cut it. The new growth will happen most likely beside your cut and continue on. This is a different kind of plant, but it shows what I’m talking about.
