I'm in West Tennessee. I don't trim mine. They continue to ripen til the end of October. It's a Chicago Hardy fig. Ripens in the middle first, then top.
Kaye, why don't your build simple little greenhouse around your fig tree? A mini hoop house and stack straw bales all around it leaving just the roof open for light? That fig tree would survive and then set fruit in the spring and you'd have figs a lot earlier. That's what I used to do in my Indiana garden.

Its called tip pruning. Next time, do it earlier in spring.
