This is my first time growing tomatoes! Lessons learned: start earlier and don’t crowd them so much.
I’m in NJ and fall is just about here, but I haven’t gotten a single red tomato from my beefsteaks! The biggest ones are just starting to blush. The plants themselves still seem healthy I think, but I don’t know how long they’ll last.
Should I start picking them now and have them ripen in a paper bag? Or keep them on the vine?

If it’s still warm: wait.
You really won’t notice a difference if flavor if you bring them inside to ripen
If you’re worried about critters getting them, bring them inside
Pick it now if you have local wildlife that will get at them.
I am fortunate in that I seemingly do not, so I leave mine on the vine to ripen until nearly full color.
If you’re ever on the fence, pick it.
Too many squirrels in our neighborhood starting to fatten up for the winter. They are digging up everything and eating anything with the slightest tint of red on it. I’m bringing mine in at first blush to ripen indoors.
