You may have walked past this plant a thousand times, not realize what it can do for you. This is chory, Latin name, and man, I’m gonna butcher this one, I think. Kakorium Intabus. Don’t hold that against me if I got it wrong. This plant is awesome. Its leaves are edible, but they’re best when they’re young, raw, or cooked like greens. You can roast the root and grind it, and you got a caffeine-free coffee alternative. That’s how some people get by at times when real coffee isn’t available. Chory has been used traditionally to support digestion, liver function, and even reduce inflammation. You can usually find it blooming from summer to late fall along roadsides like I found here today in sunny pastures, in open fields. Chicory root is also a type of polysaccharide (a fructan—watch it FODMAPPERS!), where most inulin (not insulin) comes from, along with Jerusalem artichokes (another fructan, causing FODMAP issues for those with fructose malabsorption, a problem not having enough or any of the GLUT5 transporter (not to be confused with fructose intolerance, a deadly disease where you may never have just about any plant). Sorry. So excited when I found this.😬

  2. You remind me of my grandma. She and my grandpa grew up in Appalachia but moved to Washington state in the ‘40’s. I miss her so much every day was an adventure. She taught us all sorts of plants, insects, snakes, lizards, animals, etc. We were never afraid. Ty for the memories. ❤
