i've had this seed in water for months now and every video I've seen has shown a giant brown stick sticking straight up growing out of the avocado literally as soon as roots for him. There are so many routes and all that has grown out of the other side is this flower shaped growth. Am I doing something wrong? Will it ever grow?

Pretty sure you’re doing ok, but there is a problem with the pit itself. Maybe it’s not making one of the hormones necessary for differentiation? It’s making roots, so it’s doing something.
If it has been months, I’d say replace it
