First pic was probably sprouted in the dark and for a shorter period of time. Second pic was probably sprouted under a light and for a longer period. – just my educated guess based on pictures.

To get them like store bought they need to be grown in the dark and with weight on top of them. It’s weird.

Sprout them in the dark. Harvest them a little earlier less developed.
We are looking at those sprouts from the top, what kind of roots do they have? You cannot really tell how good they are (I mean except for being a bit leafy and green) until you see how long the crunchy root is so I dunno these look not that bad from the top. Are the roots weak?
I always did mine in a large jar with a mesh top and they quickly got kind of squished in there, I read that pressure from not having much room makes them grow longer thicker roots but I only ever tired the jar with a screen on top method and it worked fine.

If you have a grow store nearby I’d recommend the 10″x20″ trays.
My setup is one with holes stacked into one thats solid. Then place another one without holes upside down on top to block the light. They are very cheap and easy to sanitize.

You need to cover the sprouts when they grow. No light at all just needs water and time. Research about it.

I think I found the problem, the first picture is a bowl of Mozzarella cheese.
Need to be grown in dark for white sprouts. It’s common sense
