    My go-to for any glut of vegetables is to pickle it all. Everything tastes better after fermenting and brining, IMHO.

  3. Why do you think that mega size radish is inedible? On the contrary you can dice it up in small pieces and freeze it and use it in a future veggie soup or stew. At this point the radish is equivalent to a turnip. And it still has vitamins and good flavour in cooking.

  4. Use the leaves as you would spinach. The large radishes can be pickled in salt water with a little sugar. You can even stir fry the big radishes. Just because they get a little fibery does not mean they are bad to eat.
