I noticed this air root(?) coming out of our monstera and was wondering if I should try propogating it. It would be nice to have two of these to put on either side of a decorative fireplace in our living room.
My only concern is that the weather has been getting cooler lately (based in NY) and I don't want to risk hurting the plant as it's still kinda stringy looking.
Should I just be patient and wait till next Spring?

I would be patient! I like to wait until there’s no question if I should prop, that way everyone is safe and healthy. Like you said the cooler months are coming which slows growth (unless you’ve got a good setup and even then it still slows) so I’d let her do her thing and chop when she’s almost laughably large.
You would have 2 anemic plants for a year, or a full one plus a baby or. It’s your choice
