I water once a week and sometimes put her outside when its sunny (not directly in the sun) and have her at a sw facing window, her leaves used to be a lot pinker but now they’re more green? She also used to be bushy but now shes long and i’d like to try and get her bushy again

Too little light turns their leaves green whereas sun bleaching fades the colour of the leaves. The fact that it also looks fairly etiolated supports this theory. I have mine sat in a north facing window on the windowsill itself and she’s very happy!
Chopittty-chop-chop! Hypoestes and Fittonia are creepers and they get lanky as they mature. They only say to keep them bushy is to regularly chop them back.
Are you worried about the light green leaves or the dark green? The dark green looks healthy but the lighter leaves mightve gotten too much sun. Like the other commenter said, giving it a little hair cut would help a lot. The semi crumped light green leaf in the middle looks a little sunburned or just dry
Overall it still looks pretty healthy!
For color: the more it is exposed to the sun (threw a window, only, never put it in direct sunlight without a looww adaptation time), the more it will be colored. Leaving it behind a window that is very exposed to the sun would be best if it were very colorful.
To make it bushy: it is best to cut, root in water (it goes fast) and replant in the pot. With luck, the part where you cut will grow back in two times instead of one and it will be even more abundant.
