They won’t store as they are. I cut them in half, put them on a baking tray, spray/brush them with olive oil. 180°C in the oven until partially dehydrated. You can blitz them for the tastiest tomato paste/sauce you have ever tasted. The more dehydrated they are, the more like a paste. Or freeze them in their halves. I blitz most of them. I think you can also bottle or ferment them – never worked for me. Apart from that, enjoy eating as many of them fresh as you can.

I cut mine up smallish and freeze them in 1 pound portions, then use them as a substitute for chopped tinned tomatoes.
What variety are those, by the way? And do they taste good raw?
