This root ball has cracked the connection on one of my sprinklers, and is starting to push on the piping. Can i cut the root ball out without damaging the tree? or should i try and reroute the sprinkler pipes?

It’s not a root ball, but yes your tree will be fine if you cut just those. You are mulched too high up the tree though, you need to see root flare

It will survive, I would still suggest rerouting if you can manage it.
Think of the roots as an upside down tree, you can usually get away with cutting a single branching root & imo, foundations & fixtures take precedent over roots, so I might cut or re-route.
You should avoid it whenever possible & really *make sure* you know what & how much you’re removing (esp as u get closer to the base), but in the same way you can take a % of the canopy with very little stress to the tree, you can pretty much do the same with the roots, altho it’s much harder to know exactly how much you’re removing the closer you get to the trunk. And preferably you should do it when the tree is dormant & only in a single troublesome spot, as opposed to an area.
It will survive but it’s not great for the tree. You risk some limbs breaking as sycamores are already prone to that. I would personally recommend digging that area out more and rebuild that section or reroute. That tree is bound to do more pipe damage down the line so depending on where that pipe goes you might want a new setup
