I've seen pictures of ZZ plants online with bright pink variegation like in the attached photo. Is this type of pink variegation possible or are these photos artificially doctored? If so, what varieties? I usually see them marketed as "pink emerald."

I believe this photo has a filter, or bright pink/red light shining on the plant (or both). I’ve seen the variety online, and they typically aren’t quite this vivid. (Look at the soil… that’s not typical coloring either.)
I haven’t seen one with reviews that look anything like the sale posts. I would agree people are adjusting the color. It’s cool buuuut you’re probably getting your hopes up if you order. I’d be curious to see more photos in regular ol sun.
Variegated Raven ZZ plants are pinkish, but not that pink.
Look at the granuals on the ground… some “should” be white. THat photo is shopped. Also, the pink leaf I got barely looked pink in daylight.
