That wasn’t onions that was a turnip root.
Those carrots are just going to regrow carrot greens. You’ll have to let it seed, and start new carrots from seed to actually get more carrots

You have to let the carrot go to seed, and plant new carrots! Yes, the green part is technically edible, but its not that great taste wise.
