One of their top crops is red vein sorrel, prized for its tart citrus flavor and dramatic red-veined leaves. Occupying about 25 percent of the vertical farm, it’s a favorite among chefs for its aesthetics and punchy flavor. Most crops like this are trimmed two or three times per growing cycle, maximizing efficiency.

Everything is sold by the clamshell. In addition to red vein sorrel, King Tide grows tangerine lace, marigold flowers, lemon verbena, borage and other unique garnishes. If it’s colorful and flavorful, there’s a good chance it’s growing there.

Microgreens are grown in a second shipping container, where shallow trays rest on wire racks under LED lighting. Most varieties grow best on hemp mats, which are less messy and more economical than coco coir. However, large-seeded crops like garbanzo and fava beans perform better in coir. A single tray usually yields one or two clamshells, and fava beans can produce up to six harvests.

For visual appeal and sweetness, some microgreens like corn and onion are grown in total darkness. These “blackout-grown” crops don’t produce chlorophyll, resulting in pale, delicate shoots with a sweeter flavor profile.

To promote better germination, trays are weighted with a top layer to press seeds gently into their medium. This improves root contact and increases success rates. Without the extra pressure, germination rates drop and timing becomes unpredictable.

At King Tide, they don’t just grow produce. They grow what’s called the “Chef’s Cut.” Every product is curated for culinary use, based on what local chefs want and need. Horne keeps up with national culinary trends and adapts his offerings accordingly, helping Charleston’s chefs stay at the forefront of plating and presentation.

Initially, King Tide grew 18 varieties of leafy greens, but they’ve since refined their crop list to six to eight staples: various mustards, marigolds and other consistent performers. This targeted approach keeps the operation lean, efficient and responsive to demand.
